Maybe one of our biggest challenge: our first Champagne ever!

Selecting a Champagne is a huge step for us. We have been "rushed" to do it so many times, but it is way too specific and I always refused to quickly select one as a complement to just "fill" the assortment for this missing but so prestigious region!

As much as we always take years and years to understand and "feel" an area and appellation, then taste the wines from various estates pre-selected to figure out their constancy over the vintages, and then... finally make our decision... here in Champagne it takes even longer and is a more patient work. The very first steps have been to push some doors of courtyards and cellars (sometimes tightly closed, especially to Bordelais non local "strangers"...), to come back, and back again, and slowly but surely understand and feel the blendings and the styles of the producers over the years. Then came our decision to select a medium size "house" or "Maison" , located in Chigny les Roses Montagne de Reims, offering a very distinctive range of Champagnes, partly made from their own vineyards, and also giving us a feeling of dynamism, so important for a long term and efficient collaboration.

Our Coup de Coeur went to two specific Cuvees both offering the best we could hope to illustrate Champagne's diversity, noblesse and finesse: An harmonious delicate and elegant Brut Tradition - Cuvee Saint-Flavy and a rare numbered Selected Reserve from wines matured in oak foudres and aged on their lees for over 5 years. Unique!
